4 cups sugar
1 cube of margarine (I like imperial)
1 cup Pet or Carnation brand evaporated milk
1 12oz bag of Semi Sweet Chocolate Chips
1 jar of marshmellow cream
1 teaspoon of vanilla extract
1 cup of chopped walnuts (optional)
Place in heavy sauce pan - like the one I use to cook a roast in on Sundays. Cook on high heat stirring constantly to dissolve. The minute it starts to boil, turn down the heat to med-hi, and boil (10 minutes for high altitude Alamosa, 8 minutes for Reno, I don't know how long for your altitudes) Do not stir during this time, just watch the clock and use your noses. You know what it should smell like. Take off the stove and add 12 oz of Nestes chocolate chips; stir until smooth. You will get tired, but keep stirring. This is what makes the fudge smooth. Add pint jar of marshmallow cream and stir some more. Don't scrape the sides where the first mixture boiled to the top. Add 1 teaspoon of Vanilla and 1 cup of chopped walnuts, if desired. :)
